Profile: BN stands for Blanco Natural. Profile: An aromatic, crunchy and profiled wine. On the nose, aromas of ripe white fruit stand out, with notes of white flowers and Mediterranean herbs. In the mouth, it is juicy, with a certain volume and structure, and with a fairly long finish.

Process: The harvest is carried out manually. Once in the winery, the grapes are destemmed without squeezing and then macerated with the skins for 11 days. After this, the grapes are pressed and fermented in stainless steel deposits with native yeasts. Once the fermentation has ended, the wine rests on its fine lees for 9 months in the same deposits. It is bottled without clarifying nor stabilising or filtering and without added sulphur.

Process: A wicked blend of equal parts Barbera and Dolcetto from prized 60-year-old vines. The grapes in this blend are usually used for two of degli Ulivi's top red labels but in vintages not up to par are reclassified into this delicious, crunchy red. This wine matures for 1 year on its lees in oak barrels and is bottled unfined and unfiltered.

A sprightly, flavoursome wine with fine tannins. Its alcohol content shouldn't be underestimated, but has absolutely no influence at all on the pleasure each sip provides.

Profile: Fresh, aromatic and pure, this is one of the finest of Wetzer's offerings. Intense aromas of clove and citrus peel, with a medium body and fine tannins and freshness. 

Process: Made from parcels all around the ancient town of Sopron on the Austrian border. The vines are all well over thirty years old and are planted on a variety of soils including schist, loam, limestone and loess. The grapes are fermented in open top wooden vats with 5% remaining whole-clusters. It then ages in old neutral barrels on lees without stirring.

Process: Harvest is performed by hand. On they arrive at the winery, the Merlot grapes are pressed directly, the Grenache is destemmed and the Syrah is left intact. Then, they are stomped and left to macerate for 5 days with the skins. The grapes ferment in stainless steel deposits with native yeasts. Once the fermentation has ended, the wine rests on its fine lees for 10 months in the same deposits. It is bottled without clarifying nor stabilising or filtering and without added sulphur.

Profile: A harmonious and elegant wine: in the glass it has a ruby red colour, the nose is very territorial and immediately takes us back to the slopes of Etna through the clear mineral notes that accompany fruity and floral scents. The taste is rich and round, with a long finish and excellent balance.

Process: Spontaneous fermentation using only indigenous yeasts with maceration on the skins for about three weeks. Maturation for 12 months in cement tanks, bottling during the waning moon period, without any addition of sulphites or other chemicals.
