Profile: This wine presents an alluring bouquet of red cherry and almond, complemented by subtle notes of fennel and a delightful hint of perfume. The palate is greeted with a salinity that adds a refined savory dimension, beautifully harmonizing with a core of red cherry and strawberry that dances through each sip.

Process: Grenache from vines planted in sandy-limestone soils which are over 60 years old. The wine ferments in amphoras with its own yeast and is aged in containers with its own thin lees for 2 months.

Profile: In this warmer vintage, the wine has been bottled by hand directly from the casks, showcasing soft, supple tannins that elegantly frame a complex profile of woodsy black fruits, earth, and spice. This unique expression offers a compelling interpretation of the grape, revealing its distinct character and depth.

Process: 100% AOC Bourgogne Pinot Noir from Maryse's own plot planted on pure limestone. A portion is directly pressed over de-stemmed fruit to create an infusion for the wine. Once dry it is pressed to old foudres via gravity where it remains for 11 months.

Origin: Australia, McLaren Vale

Profile: It’s in the crispier, more fine-boned style of Grenache being popularised by the vanguard of McLaren Vale producers. The key difference here is the wine’s unique perfume; a storm of amaro and crushed herb notes amongst the just ripe cherry fruit profile.

Process: Whole bunch fermented. Natural fermentation, no additives and minimal / no use of sulphur.

FRANCIS BOULARD

Profile: This champagne with a great personality presents a perfect balance between elegance and aromatic complexity. The Pinot Noirs provide a nice structure in the mouth, a great aromatic complexity and a beautiful homogeneity that gives this wine its elegance. The Chardonnays offer minerality, a beautiful expression and lemony notes on the finish.

Process: The blending is done at the press to bring symbiosis and cohesion. It is then vinified and aged in demi-muids with batonnage on fruit and flower days.

Profile: This wine exudes aromas of cherries, rose hips, and wild herb meadows, complemented by a delicate whisper of yeast. On the palate, it presents as juicy, displaying excellent flow and a structure defined by gentle yet discernible tannins.

Process: After hand-harvesting, the grapes were pressed and spontaneously fermented in wooden barrels. The wine remains on the full lees until it is filled, after which nothing is removed or added.

FRANCOIS DHUMES

Profile: This Auvergne Chardonnay, aged gracefully in barrels, marries delectable flavours with a retained freshness. Notably light on the palate, it offers an exceptional digestibility.

Profile: This wine is a dynamic fusion of complexity and structure, featuring a persistent saline backbone complemented by elevated floral notes. Subtle undertones of soft vanilla and spice enrich the palate, creating a sophisticated sensory experience.

Process: Open top skin fermented (50%/ Bunch/50% Destemmed) for about 8 days and pressed to new Austrian Oak foudre.
